Russian Sauce

I just learned recently that many of our e-business programs are actually hosted in Russia. What a small world, someone in Russia is managing the economic e-life of those in the USA. In honor of that new recognition I thought I would throw in a Russian Sauce.

3 tablespoons of butter
2 tablespoons of flour
1 cup of white sauce
Salt and pepper to taste
½ teaspoon of finely minced chives
½ teaspoon of prepared mustard
½ teaspoon of grated fresh horseradish
¼ cup of cream
½ teaspoon of lemon juice
½ teaspoon of Chardonnay wine

Melt butter, add flour; stir until liquid paste. Then gradually add white sauce. Stir in salt, pepper, mustard, chives, and horseradish.

Then cook until thickened and add cream and lemon juice.

I love this sauce because it makes a nice tenderloin food friendly for a dry white wine.
