Have you heard of Chasseur Sauce?
Sometimes it’s called hunter’s sauce because it goes great with venison and other game. Since deer season is such a popular time in Texas, we experiment with many sauces. Chasseur is usually made using demi-glace and Espagnole as a base, and some recipes add mushrooms, shallots, and white wine or tomatoes and herbs.
Like any sauce it is by taste and can include whatever you desire. The most important thing is to taste the sauce and wine as you are blending it.
