The ingredients in modern ketchup are: tomatoes, vinegar, sugar, salt, spice and herbs. Allspice, cloves, cinnamon, onion, and other vegetables can be included.
Ketchup started out as a general term for sauce, typically made from fruit, mushrooms or fish brine with herbs and spices. In fact today there is green ketchup, as well as red.
At the end of each season when the garden is going into dormancy, there is always that last harvest prior to a frost where we pick the last of the tomatoes, mostly green. I make a sweet ketchup with the green tomatoes, red tomatoes, brown sugar, and our Messina Hof balsamic vinegar. Cooking it down with minced onions, Cuban oregano, dried basil, allspice, garlic, salt and pepper. It’s a rich sauce.
